The dough is rolled, and it waits

Cinnamon roll dough — the same dough as the cinnamon rolls — rolled into loaf pans and left to proof. Nothing arrives in a bag; it rises right here.

Why it works

Ordinary bread can't do this.

French toast is only ever as good as its bread, and most places start with a bag of sliced white. This one starts as cinnamon roll dough — proofed in the pans, baked into loaves, rested — so the swirl runs through the middle of every slice before it goes anywhere near an egg.

Sliced thick, dipped and griddled, the outside crisps while the swirl inside goes soft and warm. The whipped cream caps are the finish, not the trick. The bread is the trick.
